This fun and tasty Roasted Yellow Squash + Olive Oil with Cilantro Baby Food Puree will be a hit with your little one! Creamy, rich and full of flavor, it’s hard not to love this amazing puree. Great baby food for 4 months and up – stage 1 baby food.
There is something so magically summer about yellow squash.
Maybe it’s their color.
Or maybe it is the way they can be plucked off the vine, still warm from the afternoon sun, mixed with a little olive oil then roasted and used as a side to almost anything you are making for dinner.
Or possibly, it’s the fact that when yellow squash are in season, they are in season! They are like the rabbits of the vegetable family. They just keep coming and coming.
In abundance.
With force.
In shear numbers that are on the edge of creating an army.
And just when you think you have had your fill, suddenly a whole new crop pops up and you have a million more to consume before they go bad.
This is where I step in, since I didn’t plant any this year, I am waiting for that time when all my friends and family, who had the time to plant them and lovenly grow them for me, are at their wits end trying to get rid of them. Then I politely take a couple bags off their hands and get to work. Pureeing, roasting, grilling. You can’t go wrong.
These simple, delicate and versatile little gems are easy to cook and filled with an abundance of Vitamin A, Potassium, Folate, Magnesium and Calcium. They are a perfect first food for your little one because of their smooth flavor and silky texture.

- 2 medium yellow squash cut into 1/2″ half moons
- 2 tsp olive oil extra virgin
- 1/4 tsp fresh cilantro finely chopped
- 1/4 cup liquid water, breast milk or stock
Heat oven to 400 Degree.
Line baking sheet with parchment paper.
Place the cut squash onto the baking sheet and bursh with olive oil. Bake for 10 minutes, flip the squash and bake for another 10 minutes. Let cool slightly.
Place the squash and cilantro a blender or food processor and puree on high for 1-2 minutes, adding the liquid in if needed.
Age: 4 months and up
Yield: roughly 15 ounces
Additional Spices: Feel free to use the following spices instead of the curry – 1/2 tsp of cumin, 1/4 tsp of nutmeg, 1/2 tsp of cloves, 1 fresh garlic clove, 1/2 tsp of chopped fresh thyme, 3-4 basil leaves, 1/2 tsp chopped rosemary or even a big pinch of fresh ginger or 1/2 tsp ginger powder.
Storage: Fridge – store in an airtight container in the fridge for 3-4 days. Freezer – can be frozen for up to 4 months (this and this are my favorite freezer storage containers).

Yellow Squash + Thyme Baby Food Puree (6+M - Stage 1)
This Yellow Squash + Thyme Baby Food Puree is a great first food for baby – mild, creamy and filled with essential nutrients for growing baby! Great for 4+ months – Stage 1 Baby Food.

This smooth and creamy puree is made with yellow squash (or zucchini as I call them), a small white potato and a sprinkle of thyme. This puree is mild with a nice note of fragrant thyme and is full of vitamin A and C, magnesium, fiber and folate. Since yellow squash is in abundance in the spring and summer months, you have no excuse not to make this.
Because summer squash is loaded with water, I use a white potato in this recipe for some extra thickness. But if you aren’t into the potato, you can also substitute in an apple or pear if you prefer.
This easy puree is made in exactly 3 steps and takes roughly 14 minutes to make, from chopping to finished puree. 14 minutes until you have this delicious puree bursting with summer’s favorite yellow vegetable!
Step 1 – Chop your veggies
Step 2 – Stack your baskets and push the steam button
Step 3 – Puree the zucchini into a smooth consistency
- 2 medium yellow squash, trimmed and chopped
- 1 small white potato, chopped (see notes)
- 1/2 tsp fresh thyme, roughly chopped
Instructions for Nutribaby
Place the squash, white potato and thyme into the large basket.
Start a 10 minute steam cycle.
Let cool and then transfer all of the ingredients into the blender.
Puree until smooth. I did not need to add any additional cooking liquid but if your puree is too thick, add 2 tablespoons of the cooking liquid in at a time until you achieve your desired texture.
Instructions for Regular Cooking Method
In a medium saucepan, bring 2 inches of water to a boil. Add the squash, potato and thyme into a steamer basket and steam for 10 minutes. Let cool slightly. Reserve steamer water.
Transfer all of the ingredients in to a blender of food processor and puree for 1-2 minutes or until smooth, adding water in 1/4 cup increments if needed.
Age: 4+ months
Yield: 15 ounces
Note on Potato: Feel free to use a cored, peeled and chopped apple or pear in this recipe instead of the potato.
Notes on Thyme: I steamed the thyme in this recipe so their flavors are more subtle, but for a big spice kick you can add the thyme right before pureeing.

The best varieties of zucchini for open ground with a photo, name and description
Almost every gardener can find zucchini in the beds. The fruits of this plant are used for dietary, baby food, in the preparation of various dishes, for preparations for the winter.
Before you grow planting material, you need to know a few features when choosing a variety. Zucchini can have any shape, color, taste, color, ripening period, but most importantly, they must give abundant harvests, correspond to the climatic zone, the soil of the region.

Most cultivars and hybrids of zucchini have a climbing or bush form. Climbing varieties occupy more area than bush varieties.
Varieties are pollinated parthenocarpically or traditionally. For cultivation without shelter (in open ground), you can buy both.
All seeds must be of good quality. A well-known, proven manufacturer can serve as a guarantee of quality.
Varieties of zucchini for the Moscow region
Varieties for the Moscow region can be divided into groups: zucchini, traditional varieties and hybrids.
All groups have their own characteristics, advantages, disadvantages.
Zucchini have a dense skin, different colors, fruits are stored in a cold place for more than a month. Productivity in comparison with traditional varieties is lower.
Seeds can be collected from varietal marrows for sowing next year. Due to the tender pulp, the fruits do not last long.
Hybrids always give a high and stable yield, but are not suitable for collecting seeds for further breeding.
The best varieties for the Moscow region are: White Bush, Iskander F1, Genovese, Golda, Cavili, Partenon, Tsukesha, Spaghetti, Tivoli, Delicate Zephyr, Gribovskie.
Early maturing, high-quality yellow-fruited zucchini varieties include: Yellow-fruited, Golda and Zolotinka.
The best white productive hybrids (with fruits of medium size) are: Mountain, Beloplodny and White.
Popular varieties with green fruits include: Squarusha, Waterfall, Ball, Delicacy, Genovese.
The best bushy zucchini are: Tsukesha, Odessa 32, Green Bush, Gribovsky 37, Karizma.
All these varieties are frost-resistant and give a bountiful harvest.
Varieties of zucchini for the Urals
For the Ural climate, the best varieties are early-ripening zucchini, such as Iskander, Apollo, White, Negro, Yellow-fruited, Ball, Kavili, Green Bush, Long-fruited. Delicate fruits ripen in 1-1.5 months.
Late varieties ripen in 2.5-3 months. The best varieties are: Skvorusha, Lagenaria Calabaza, Spaghetti Raviolo, Black Beauty.
The most delicious, disease-resistant, high-yielding varieties are: Anchor, Roller, Tenderness, Isolda, Tristan, Gribovskie 37, Marquise, Astoria.
Outdoor zucchini suitable for growing in all climatic conditions. Varieties are suitable for the Urals: Kuand, Zolotinka, Ronde, Zebra, Gribovskie 37, Mountain, Jade, Macaroni, Yellow-fruited.
Varieties of zucchini for Siberia
Cold-resistant and moisture-resistant varieties are suitable for Siberia: Karisma, Gribovskie 37, Pharaoh, Long-fruited and Polar Bear.
Self-pollinated zucchini varieties produce fruit in all climates. Such varieties are: Parthenon, Apollo, Black Zucchini, Kavili, Belogor.
The most unpretentious and highly productive for the Moscow region, the Urals and Siberia are: Parthenon F1, Genovese, Ardendo 174 F1 and others.

Which variety is better to choose - domestic or foreign? Advantages and disadvantages.
Domestic varieties are distinguished by tasty, soft pulp, do not lose their qualities during canning and storage in the refrigerator. They are more adapted to climatic conditions and cold summer does not affect the yield and taste of fruits.
Imported hybrids have a thin skin, a small seed chamber and a large amount of pulp. On the bushes, the fruits do not outgrow and have a uniform shape.
Long-term storage and preservation is not suitable for such marrows. They are more warm and moisture-loving, and at low temperatures, drought yields decrease.
Domestic zucchini are winter-hardy, more useful, have a pronounced taste, and are stored longer.
Imported varieties (hybrids) are early ripe, have a beautiful appearance, but are less useful due to poor mineral composition.

Varieties of early-ripening marrows
Early-ripening varieties include: Kavili F1, Tsukesha, Iskander F1, Karisma F1, Ball, Apollo F1, Roller, Aeronaut, Early handsome, Beloplodny F1 and others.
Cavili F1
Refers to high-yielding marrow varieties. The bush is compact, the leaves are spotty (dark green with white spots). An early ripe variety is intended for the mass collection of zucchini. There are many fruits, fruiting lasts 2 months, until autumn frosts. The color is uniform, white-green.
Harvesting is done when the fruit reaches 300 grams, but when overgrown, they do not coarsen. The length of the fruit when harvested exceeds 22 centimeters. The pulp is juicy and tender.
Up to 9 kilograms of fruits are removed from the bush, the fruits do not overripe. The variety is resistant to a large number of diseases.
Cavili variety: video
Iskander F1
It is a unique Dutch hybrid with high, extra early yield and natural protection against most diseases. The ripening period of the variety is 40-45 days.
Squash slightly ribbed, club-shaped or cylindrical, narrow, smooth. The color is light green, with whitish speckles. The average length of zucchini is 20 centimeters. Fruit weight 550-700 grams.
About 17 kilograms of high quality courgettes are taken from the bush. The pulp is tender, tasty, pale green or light cream in color.

Tsukesha
It is a versatile, early ripe, quite popular hybrid. The plant is resistant to spring frosts. Fruiting in the variety occurs in 46-50 days. Fruit color is dark green with white spots.
Weight reaches 1-1.2 kilograms. Length up to 30 centimeters. From a meter you can remove 6-12 kilograms of zucchini. When overgrown, the taste of the fruit does not remain the same. The variety is light, transportable.
Karisma F1
It is an early maturing hybrid variety. Ripening occurs at 40-45 days. Zucchini are light green, elongated, cylindrical in shape. The pulp is very juicy, white, tasty. Bushes are compact.
The plant is resistant to pests and diseases. Zucchini tolerates long transportation well. Used in fresh, thermally processed form.
Roller
An ultra-early, high-yielding squash hybrid. Ripening occurs on the 36th day after germination. Variety Roller fruits of excellent quality and taste. The fruits are sweet and large. Weight 1-1.2 kilograms.
Apollo F1

White-fruited
Versatile bush variety. The bush is small, compact. Zucchini ripen in 35-40 days. Zucchini is cylindrical, smooth, whitish in color, transportable. Weight 0.6-1 kilogram. The pulp is creamy, medium density.
The plant is resistant to various diseases. The fruits are suitable for fresh, salted and winter preparations.
Mid-season varieties
The best mid-season varieties include: Skvorushka, Kuand, Gribovskie 37, Jade, Zolotinka, Macaroni, Black handsome.
Starling

Kuand

Weight up to 1 kilogram. Coloring spotted (camouflage), bright. The skin is thin, coarsens when overripe. The pulp is juicy, dense, tender, white-cream color.
The fruits are tasty, the quality is not lost during conservation and processing. The variety is resistant to many diseases.
Gribovsky 37
High-yielding variety. The bush is strongly branched. Ripening period - 50-60 days. Fruiting stretches up to 45 days. The peel is white, quickly coarsens. The pulp is tasty, with overgrowth the taste worsens.
The plant is not affected by diseases. The presentation of the fruit is high. Zucchini are stored for a long time, while they do not lose their qualities, they are transportable. Used fresh, thermally processed and for conservation.
Zolotinka
This is a mid-season, versatile Italian zucchini hybrid. From the moment of sowing the seeds to the removal of fruits from the garden, 40 days pass. The plant is high-yielding, bushy. 15-18 zucchini are collected from a bush.

Black handsome
It is a mid-early variety of foreign selection. Fruiting occurs at 45-55 days. The bush is compact, strongly leafy. On one bush, up to 5 fruits ripen at the same time.
Fruits are thin-skinned, cylindrical, shiny, smooth. Intense, dark green color. The pulp is greenish-white, tender, dense, unsweetened. Length 22 centimeters. Weight 0.5-1 kilogram.
Up to 20 kilograms of marrows are harvested per square meter. The plant is not afraid of diseases, pests.
Late varieties
Late varieties include Spaghetti, Spaghetti Raviolo, Tivoli, Lageraria, Lagenaria Calabaza, Long-fruited, Walnut.
Spaghetti variety
Refers to late-ripening varieties. Ripening occurs in 99-120 days. The bush of these varieties is compact. Fruits are cylindrical, orange (dark yellow). The length reaches 30 centimeters.
Firm skin. The flesh is creamy-orange, thick, breaks up into long orange threads during heat treatment. Weight - 1.5 kilograms. Mature fruits are stored for 4-5 months. The variety is resistant to diseases, easily tolerates frosts.
Similar qualities to Spaghetti in varieties Spaghetti Raviolo, Tivoli.
Lagenaria Calabaza
It is a non-standard variety of zucchini. The bushes are strong, massive, but do not grow over the site. They grow and unwind on a support. Fruits are green in color. Pear shape. The length reaches 1.7 meters. Weight 12 kilograms. The fruits bend and take on unusual shapes. About 43 kilograms of fruit are removed from the bush.
Young fruits are universal in use. When cutting a piece from the fruit, the cut point on the zucchini dries up, and the fruit continues to grow. The taste of old zucchini deteriorates. The skin turns to stone.
Overripe fruits are used to make vases, containers for liquids. The plant is demanding for watering, top dressing.
Variety Lagenaria has similar qualities, but the fruit weight is smaller and reaches 7-12 kilograms.
