10 recipes between breakfast and lunch

Sunday afternoon is not a time for everyday worries. To make the day off happy, just open the curtains, take a deep breath and invite your family to your brunch! The essence of this meal is to take your time to enjoy the meal in a pleasant company. And the name arose from two English words - lunch and breakfast.

Breakfast that flows into lunch can last up to several hours with active conversation with friends or colleagues. Hearty dishes are complemented by a drink and dessert. Today we will talk about the features of an unusual meal and share ten ideas for a delicious brunch!

Simple rules

The first brunches began to be held in the university environment at the end of the 19th century. The tradition was started by Oxford staff and students. Students and teachers lacked an opportunity to socialize in a relaxed atmosphere and share bold ideas with each other. Therefore, it was decided on Sunday closer to dinner to set the table with cocktails and snacks. Why not Saturday? On this day, the students were not up to the teachers, because no one canceled their personal lives. Over time, other British educational institutions picked up this tradition!

Today, brunches are often organized like a buffet: various snacks and drinks are placed on the table at the same time, and a large group of people freely taste them. But this is not a necessary condition, especially if you are taking a reception at home.

Brunch can consist of hot dishes that do not wait in the wings, desserts, as well as fresh fruit. Sometimes guests are invited to participate in an interactive brunch where they need to fry toasts, pancakes and decorate them with toppings. Usually, light meals, reminiscent of breakfast, predominate. The clothes are loose and the mood is relaxed. If all this suits you, get acquainted with the current menu!

Spinach Italian omelet

Frittata is a great alternative to the usual omelet. You can cook it not only in a pan, but also in the oven, using cocotte makers or ramekins. The filling can be anything: green beans, bell peppers, ham or spinach with garlic - everything will do. In our recipe, the ingredients are for three servings.

Ingredients:

  • chicken eggs - 6 pcs.
  • cream - 100 ml
  • spinach - 3 handfuls
  • bell pepper - 1 pc.
  • cheese - 70 g
  • garlic - 2 cloves
  • olive oil - 1 tbsp. l.
  • salt - to taste
  • freshly ground black pepper - to taste

Cooking method:

  1. Cut the bell pepper into small cubes, finely chop the garlic. Place the vegetables in a heated skillet with olive oil. Roast lightly.
  2. Add spinach and cook until softened. Remove excess liquid.
  3. In a deep bowl, mix eggs with cream, beat until smooth. Add salt and pepper to taste. Cheese grate on a coarse grater.
  4. Put the stuffing from the vegetables in cocotte makers, pour over the egg mass and sprinkle with cheese. Cook for 15 minutes at 180°C in a preheated oven.
  5. Serve directly in the dishes in which you cooked. No wonder they are so beautiful!

Healthy Quinoa Bowl with Poached Egg

High in protein, fat and carbohydrates, a meal that is sure to be appreciated by your friends on a healthy diet. After such a breakfast-lunch, you can afford dessert!

Ingredients:

  • Quinoa - 110 g
  • avocado - 2 pcs.
  • chicken eggs - 3 pcs.
  • cucumbers - 1 pc.
  • arugula - 3 handfuls
  • olive oil - 2 tbsp. l.
  • sesame - to taste
  • salt - to taste
  • freshly ground black pepper - to taste

Cooking method:

  1. Cook quinoa according to package instructions.
  2. Wash the greens and dry. Randomly slice the cucumber and avocado.
  3. Boil a poached egg according to our detailed instructions.
  4. Collect the bowl. In the center - quinoa, on the sides - arugula, cucumber, avocado and poached. Season the dish with salt and pepper.
  5. Top with a little olive oil and sesame before serving.

Original hash browns

To prepare an unusual potato dish, you must first mash it without milk. Think in advance with what sauce you will serve the dish. If desired, greens or garlic, passed through a press, can be added to the dough.

Ingredients:

  • 600 g mashed potatoes
  • wheat flour - 5 tbsp. l.
  • hard cheese - 100 g
  • chicken eggs - 1 pc.
  • onion - 1 pc.
  • breadcrumbs - 70 g
  • vegetable oil - 2 tbsp. l.
  • salt - to taste
  • freshly ground black pepper - to taste

Preparation:

  1. Cut the onion into small cubes and fry in vegetable oil until golden.
  2. Grate cheese, place in a deep bowl.
  3. Add mashed potatoes, flour, chicken egg, fried onion and spices to taste. Blend until smooth and form into small balls.
  4. Make blanks from balloons. Roll in breadcrumbs.
  5. Fry in vegetable oil until cooked through on both sides. You can also bake hash browns in the oven.

Ricotta Sundried Tomato Sandwiches

If you don't have much time to prepare an appetizer, make quick but original sundried tomato sandwiches.

Ingredients:

  • whole grain bread - 6 slices
  • ricotta - 150 g
  • Dried tomatoes in olive oil - 180 g
  • greens - to taste

Preparation:

  1. Dry the bread in a dry frying pan or in a toaster. Brush with ricotta.
  2. Place tomatoes on paper towel to drain excess oil. Lay them on top of the ricotta.
  3. Chop greens and add to sandwiches. The appetizer is ready, serve it immediately to the table!

Croissants with curd cheese and salmon

Another option for a quick snack is croissants with curd cheese and salmon. You can prepare the basis for such puff pastry sandwiches yourself: read the article. Alternatively, croissants can be small.

Ingredients:

  • 3 croissants
  • slightly salted salmon - 170 g
  • curd cheese - 130 g
  • lettuce leaves - 3 pcs.

Preparation:

  1. Cut the croissants in half and, if desired, dry them in a frying pan.
  2. Brush one piece with cream cheese and top with fish. Salmon can be replaced with trout.
  3. Next - lettuce. Top with second half. Ready!

Bellini cocktail

Traditionally any brunch is served with low-alcohol drinks. It can be champagne or cocktails: Mimosa, Bloody Mary, Bellini. To prepare the latter, take any sparkling wine. Semi-sweet or dry - the choice is yours.

Ingredients:

  • sparkling wine - 75 ml
  • peach fresh or juice - 75 ml
  • peach slice - for serving

Preparation:

  1. Pour the peach juice into a champagne glass, it should fill exactly half of the glass.
  2. Add the same amount of sparkling wine. Stir lightly.
  3. Decorate the glass with a peach wedge. Very fast and great results!

Spiced Coffee with Pink Pepper

If tea and regular coffee are already boring, try making aromatic coffee with spices.

Ingredients:

  • water - 250 ml
  • ground coffee - 1.5 tsp.
  • pink pepper - 4 peas
  • cinnamon - 2 pinches
  • nutmeg - 1 pinch

Method of preparation:

  1. Grind pink pepper in a way convenient for you: in a mortar or coffee grinder. Mix with other spices.
  2. Pour the ground coffee with spices into the cezve and pour in the water. Cook until done!

Buckwheat waffles with whipped cream

For those who do not like to eat several dishes at once, freshly made waffles can be served. They will replace both the main course and dessert. If you replace regular milk with vegetable milk, and cream with maple syrup, you get a lean version.

Ingredients:

  • buckwheat flour - 180 g
  • wheat flour - 60 g
  • sugar - 100 g
  • milk - 200 ml
  • water - 70 ml
  • vanilla sugar - 10 g
  • baking powder - 1 tsp.
  • vegetable oil - 3 tbsp. l.
  • wine vinegar - 1 tbsp. l.
  • salt - 1 pinch
  • whipped cream - to taste
  • berries and nuts - to taste

Preparation:

  1. In a deep bowl, mix both types of flour, sugar, vanilla sugar, salt and baking powder.
  2. Pour in milk, vegetable oil and warm water. Add wine vinegar. Stir until smooth.
  3. Use a waffle iron to fry the waffles. Serve with whipped cream and berries!

Chocolate Panna Cotta

Delicate creamy dessert can be prepared the day before and left in the refrigerator overnight. If you do not like chocolate, you can exclude it and add vanillin.

Ingredients:

  • cream 33-35% - 350 ml
  • sugar - 3 tbsp. l.
  • dark chocolate - 70 g
  • mascarpone - 3 tbsp. l.
  • butter - 3 tbsp. l.
  • gelatin - 2.5 tbsp. l.
  • salt - 1 pinch
  • cocoa powder - for serving

Method of preparation:

  1. Add gelatin to 150 ml of cream, stir and leave for 15 minutes.
  2. Add sugar, mascarpone and a pinch of salt to the cream. Put on fire and, stirring, bring to a boil, but do not boil.
  3. Break the chocolate into small pieces, add to the hot cream and beat everything lightly with a whisk until the chocolate is completely dissolved. Pour in the cream with gelatin and mix everything. Strain through a sieve.
  4. Grease small bowls or cups with butter, pour chocolate mass into them, tighten with foil and refrigerate until completely solidified.

Cherry pie

A piece of cherry pie to go - that's the perfect brunch! Frozen cherries can be substituted for jam if you have one. Use a mold with a diameter of at least 26 cm.

Ingredients:

For the dough:

  • wheat flour - 350 g
  • sour cream - 270 g
  • sugar - 100 g
  • butter - 120 g
  • baking powder - 6 g

Filling:

  • frozen cherries - 400 g
  • sugar - 200 g
  • starch - 1 tbsp. l.

Preparation:

  1. Mix sour cream with sugar and whisk. Melt the butter and start pouring, stirring constantly.
  2. Combine flour with baking powder. Sift. Knead the dough and remove it under the film. Let it stand in the refrigerator for half an hour.
  3. Boil frozen cherries with sugar over moderate heat. Add starch to thicken the mass a little.
  4. Divide the dough into two parts. From one make a base with sides. Prick with a fork.
  5. Carefully place the filling (thick part). Decorate the top of the pie with the mesh using the second piece of dough.
  6. Place the cake in a preheated oven at 180°C and bake for about 20 minutes. Let it cool down, then the filling will stabilize and will not flow out. Serve to the table!

What is brunch - and 3 simple ideas how to cook it for a family with children

On weekends you don't have to run anywhere (we really hope so), you can lie in bed until noon, and then cook brunch (that is, something between breakfast and lunch) and gather the whole family at the table. We offer three recipes that will make your weekend even more comfortable.

Brunches appeared in Oxford in the 19th century. The professors and students really didn't have enough time to socialize and discuss great ideas and inventions, so they decided to meet on Sundays between breakfast and lunch. Cocktails, snacks and unhurried philosophical debates — the format quickly took root, universities adopted it, and then the idea went to the people.

Brunch is not breakfast or lunch, but something that replaces both of these meals, a leisurely meal on a day off, when you sit down at the table around noon and leave it at whatever time you can.

Brunch usually has intricate appetizers and complex dishes, but our goal is quick, tasty, and in a way that children can participate in the cooking process.

Hash browns

The longest and most difficult thing is to peel a potato and boil it. But you can clean it in the evening - or involve children in this by giving them a vegetable peeler.

Ingredients:

  • Potato puree - 600 g
  • Flour - 5 tbsp. l.
  • Hard cheese - 100 g
  • Eggs — 1 pc.
  • Onion — 1 pc.
  • Breadcrumbs - 70 g
  • Vegetable oil - 2 tbsp. l.
  • Salt, pepper - to taste

Boil the potatoes in salted water until cooked, drain it and prepare mashed potatoes, but without milk. You can add a little butter, garlic and aromatic herbs, but only if you wish.

Peel the onion, finely chop and saute in vegetable oil until golden brown.

Three cheese on a fine grater and place in a deep bowl.

Beat the egg into the mashed potatoes, add flour and fried onion. You should get a homogeneous mass. We form balls from mashed potatoes, turn them into cutlets of the desired shape and roll in breadcrumbs.

You can bake them in the oven at 180 degrees for 15-20 minutes or fry until golden brown in a pan.

Serve with homemade ketchup or your favorite sauce: Greek yogurt with garlic and herbs is a great option.

Fried eggs on pizza

Fried eggs are a dish that we strongly associate with breakfasts, and pizza is something about joy and gatherings with friends. For brunch, we suggest combining these two dishes - it will be tasty, original and not boring, because you can change the filling ingredients from time to time.

Ingredients

For the dough:

  • Flour - 4 tbsp. l.
  • Sour cream - 2 tbsp. l.
  • Mayonnaise - 2 tbsp. l.

For the filling:

  • Tomato sauce or ketchup - 2 tbsp. l.
  • Cheese - 120 g
  • Tomatoes - 2 pcs.
  • Any ham or sausage - 120-150 g
  • Eggs — 4 pcs.
  • Dried oregano - to taste

Mix sour cream and mayonnaise in a bowl. Drive one egg into it and add flour (preferably one spoon at a time), mix again. You can add a little salt, but be careful: mayonnaise, as a rule, is already salty. This is the basis for our pizza.

Wash tomatoes and cut into circles, three cheese on a coarse grater, and cut ham or sausage into thin slices.

Pour a little vegetable oil into a cold frying pan, immediately spread the dough and level it with a silicone spatula.

Lubricate the pizza with tomato sauce - it is better to do this using the same silicone spatula or spoon (you will need its back side), move in spirals from the center so that the dough remains even over the entire surface.

Now let's start the stuffing. The first layer should be cheese - it will hold the pizza together. Don't be greedy: there is never too much cheese. Place tomato slices and sausages on top of the cheese. We break the eggs into our pizza, you can pierce each yolk with a fork so that it spreads a little. And top with grated cheese again. Here you can cheat and put mozzarella circles on top - this will add flavor and juiciness to the pizza.

Cook covered over low heat to prevent pizza from burning, 20-25 minutes. Sprinkle the finished pizza with oregano and serve to the table right in the pan.

French toast on a skewer

The kids will love it. Not only is this a real dessert, especially if served with a scoop (or rather a couple) of vanilla or chocolate ice cream, you don’t have to use a fork and knife either.

Ingredients

  • Eggs - 8 pcs.
  • Milk - 140 ml
  • Pinch of salt
  • Vanilla extract - ¼ tsp.
  • Loaf of bread - 1 pc.
  • Butter - 4 tbsp. l.
  • Bananas - 2 pcs.
  • Berries to taste - 400 g

Preheat the oven to 120 degrees and put a baking sheet in it, it should be warm.
