Each banana processed at the Diana Food factory in Ecuador passes through the hands of employees who ensure the highest quality by manually peeling the fruit. They process three dozen sweet bananas per minute, which are then used to make puree, flake and powder. nine0003

The warehouse has a sweet and fruity smell, salsa music plays on the big stereo. Workers take bananas from a rattling conveyor belt in moves they've practiced thousands of times. They tear open the skin and manually peel the fruit. If bananas are machine-peeled, the natural latex in the skin, which can function as an allergen, will get into the flesh of the fruit and make it darker.

The spacious, light-filled room is one of the centerpieces of an Ecuadorian facility where 375 men and women work 24 hours a day, six days a week to process valuable and vitamin-rich fruits. Growing organic banana trend

Every banana that the company, founded in 1961, processes comes from one of the plantations within a radius of 60 kilometers from its location. About 25% are organic, and this number is growing rapidly. The rest are grown according to traditional agricultural methods. One organic farmer is Gary Mendieta, who runs one of his three relatively small mountain farms. Up to 1500 plants grow on each of the eight hectares. He and his team of five are always busy. They cut large excess plant leaves, clean the soil, protect plant seed heads three or four meters high with plastic bags that allow light and air to pass through, but protect against insects and birds. Each plant has two or three harvests per year. “We cut off the plant that bore fruit.”
A worker carefully cuts down a plant while the fruit is still green. The second catches the shoot, which can weigh up to 50 kilograms, on a piece of hard foam and carries it on his shoulder to the collection point. Here the fruits are washed and sorted. With a trained eye, the worker sorts the bananas and selects those that do not have the desired curve, size, or spots. These second-rate fruits do not make it to the next stage of the production process. The agronomist has been working for Diana Food for two years now. He and his colleagues visit the plantations every two weeks, advise farmers and ensure that everything from planting to fertilization and weed and pest control to fruit picking and sorting is done to company standards. In addition to providing sufficient nutrients, irrigation also plays an important role. “Banana is a lady. She doesn't like wet feet,” explains Bonnard with a smile. That is why water supply and sanitation systems must work perfectly. nine0015 Diana Food's agricultural specialists have extensive experience in the industry. “And we have a very good relationship of trust with the farmers,” says Bonnard. “At the same time, we set high standards and keep records so that we can track the raw materials on the plantation at any time.”

There are about 4,500 banana plantations in El Oro. The Diana Food factory is located in the heart of the region, so bananas never have to travel far. Farmers take care of their plants and harvest throughout the year, ensuring a constant supply of raw materials. nine0003

Quality checks every step of the way

Dozens of trucks loaded with green bananas arrive in Pasaia every day. After weighing, a visual inspection is carried out. “We are constantly looking at quality,” says Francisco Larrea, who has led the company for 18 years. “After unloading, the bananas are placed in airtight storage and complete their ripening to reach the perfect sweet taste.” After peeling, the peel is composted and the fruit goes through various processes. A large machine turns them into a fine paste, which is then filtered and heated again. The vacuum evaporation process produces a highly concentrated banana essence. nine0015 In yet another process, most of this wort is further dehydrated and treated at high temperature in six drum dryers. This pulp has only a small amount of residual moisture and is pressed through two rollers. The result is an edible paper that is dry and warm, with an intense flavor of fresh bananas. The final step: Knives up to a meter long cut the paper to the desired size for flake or powder. “The process has to be right at every step,” says Larrea, under whose leadership the number of employees has almost quadrupled. The company wants to invest in new drum dryer jobs and laboratory equipment to maintain the excellence of this pure natural product. The end products produced at this plant are used in many applications around the world. “Sustainability is equally important to us,” says Larrea. "We were the first company to obtain an environmental license in the province of El Oro." The site is a member of the SEDEX (Supplier Ethical Exchange Data Provider) online platform for ethically and socially sustainable manufacturers. This is partly due to Diana Food's focus on the well-being of its employees at work. For example, they receive free meals in the cafeteria, they are provided with work clothes and transportation services to get to work. The company also provides medical care. Men and women receive regular check-ups and medication, are vaccinated against yellow fever, and can go to the clinic when a serious problem arises. Ecuador offers ideal conditions for growing bananas. Soil quality is excellent; the climate is tropical but not affected by hurricanes and the rainy season is relatively short. One of the benefits of these environmental conditions is that less pesticides and fertilizers need to be used for farming. This, of course, also contributes to the spread of organic farming practices. This helped make the country the fourth largest banana producer and the largest banana exporter in the world. The industry is owned by the largest employers in this country, which lies in the northwest of South America between Colombia and Peru. Almost one million people work on approximately 220,000 hectares of plantations, especially in the three western provinces of Los Rios, Guayas and El Oro - the latter of which has the most plantations with a staggering 4,500.
