Duck. Duck dishes. TRADITIONAL RUSSIAN CUISINE
Previously, poultry dishes were traditionally associated with the onset of long-awaited holidays (Christmas, Easter, New Year, etc. ). Since ancient times, the Slavic peoples have eaten swans, cranes, herons, wild ducks, black grouse, partridges, poultry - chickens, ducks, geese, etc. And at many feasts, dishes from them were the main decoration of the festive table.
A characteristic of Russian cuisine is the preparation of poultry and game with whole carcasses. Stuffed products have always been especially popular - duck and goose with apples, chicken stuffed with rice and raisins or prunes, goose and duck stuffed with salted mushrooms or milk mushrooms, etc. It is difficult to imagine a modern holiday table without these traditional products. Beautifully and originally designed, they seem to confirm the old saying "A bird on the table is a holiday in the house."
Poultry intended for boiling, stewing or frying is pre-cut: the head is cut off along with the neck and the tips of the wings, gutted, excess fat is removed, then washed in running water and dried. If the bird is fried whole, then the legs and wings are pressed to the sides of the body and tied.
Duck stuffed with mushrooms
Ingredients :
1 duck, 50-100 g butter, 750 g salted milk mushrooms, 1-2 pickled cucumbers, 100 g capers, 2-3 tsp sugar, 2-3 tbsp. tablespoons of vinegar, salt, dill, broth or water.
Cooking
Salt the carcass inside and out, stuff with salted milk mushrooms and fry in the oven, periodically piercing and pouring over the resulting juice.
Pickled cucumbers, peeled, seeds and finely chopped.
Pour broth over cucumbers, capers and dill, add sugar, vinegar and boil.
Cut the cooked duck into portions and pour over the sauce.
Duck stuffed with apples
Ingredients :
1 duck, 4-5 apples, cumin, salt, powdered sugar.
Cooking
Grate the carcass with salt, fill with peeled and sliced apples and sew up the hole with threads.
Pour some water into the roaster, sprinkle the duck with caraway seeds and roast in the oven. Periodically pierce the skin with a fork and pour over the duck with the resulting juice.
When the duck is ready, take the apples out of it and sprinkle with powdered sugar.
Duck stuffed with potatoes and prunes
Ingredients :
1 small duck, 0.7-0.8 kg of potatoes, 120-150 g of prunes, 4 tbsp. spoons of milk, 2 tbsp. tablespoons butter, pepper, salt.
Cooking
Stuff the duck carcass with potato filling: grate the raw potatoes on a fine grater, pour boiled milk, add butter, salt, pepper, finely chopped pitted prunes boiled in a small amount of water and mix.
Roast in the oven, periodically pouring the resulting juice.
Duck (or turkey) stuffed with potatoes and sausages
Ingredients :
1 duck, 3 pcs. potatoes, 200 g white bread, 2 sausages, 2 onions, 2 tbsp. tablespoons chopped parsley and dill, 2 tbsp. tablespoons of butter, 1 tbsp. a spoonful of vegetable oil, pepper, salt.
Cooking
Fry diced bread and potatoes in butter. Fry finely chopped onions, parsley and dill in vegetable oil. Cut sausages into slices and fry.
Mix everything, salt.
Salt and pepper the carcass, stuff with minced meat and fry in the oven, periodically pouring the resulting juice and fat.
Duck with stewed mushrooms and apples
Ingredients :
1 duck with giblets, 1/2 kg of stewed mushrooms, 1 tbsp. a spoonful of butter, 1 onion, 1 egg, 3-4 apples, 1 teaspoon of cumin, 2 cloves of garlic, salt, pepper.
Cooking
Cut the carcass along the back, wash and remove the bones (leave the bones of the thighs and wings), cut off the neck. Grate the carcass from the inside with crushed garlic, cumin and salt.
For the filling, pass stewed mushrooms through a meat grinder together with boiled liver, stomach and neck meat, add finely chopped onion and fried in oil, peeled and sliced apples, salt, pepper, beat in an egg and mix.
Stuff the duck, sew it up and roast in the oven, basting occasionally with the resulting juice and fat.
To serve, cut into portions and drizzle with juice.
Duck or goose stuffed with rice
Ingredients :
1 duck or goose, 2 cups boiled rice, 1 egg, 1-2 tbsp. tablespoons butter, 1-2 onions, 1-2 tbsp. spoons of raisins, spices, salt.
Cooking
Put the onion sautéed in oil, beaten egg, raisins, salt into crumbly boiled rice and mix.
Grate the bird carcass with salt and spices (pepper, bay leaf, coriander, cumin), fill with minced meat, sew up and fry in the oven, periodically pouring juice and fat.
Duck or goose stuffed with red cabbage
Ingredients :
1 duck or goose, pepper, bay leaf, coriander, cumin, salt, 250 g red cabbage, 2-3 onions, 1 carrot, 1 tbsp. a spoonful of butter, lemon juice or citric acid, salt, sugar.
Cooking
Grate the bird carcass with a mixture of salt and spices, fill with minced meat, sew up and fry in the oven, periodically pouring over the secreted juice and fat.
To prepare minced meat, finely chop the cabbage, add onion and carrot sautéed in oil, salt and sugar to taste, pour in lemon juice, a little hot water and simmer.
When serving, cut the bird into portions, put on a dish, put stewed cabbage around.
Serve strained sauce in a gravy boat.
Duck with fruits
Ingredients :
1 duck, 150 g prunes, 3-4 apples, lemon juice, salt, pepper, marjoram.
Cooking
Grate the duck carcass with lemon juice, salt and pepper, fill it with stuffing of prunes and apples cut into slices and sprinkled with marjoram and put in a cold place for 2-3 hours.
Roast in the oven, periodically basting with the resulting juice.
Duck roasted with cherries
Ingredients :
1 duck, 500 g cherries, 250 ml red wine, pepper, salt.
Cooking
Salt and pepper the duck carcass, put it in a roaster and fry in the oven, periodically pouring it with juice from a baking sheet.
Remove pits from cherries and stew in red wine for 5 minutes, salt to taste. 10 minutes before the end of the roasting of the bird, put cherries in the roaster.
Cut the cooked duck into portions and serve with cherries, drain the sauce and serve separately.
Duck with lemon juice and wine
Ingredients :
1 duck weighing 1.5-2 kg, 1 glass of white wine, 1 lemon, butter, 2 tbsp. spoons of sour cream, pepper, salt, parsley.
Cooking
Salt the duck carcass, pepper it, sprinkle with lemon juice and fry in butter. Then pour wine over and fry in the oven until cooked, periodically pouring the resulting juice.
To prepare the sauce, mix the resulting juice with sour cream and bring to a boil.
Cut the cooked duck into portions and pour over the sauce.
Garnish with lemon wedges and parsley.
Duck baked with spices
Ingredients :
1 duck, 2 tbsp. tablespoons of a mixture of herbs (sage, dill, lemon balm, thyme, parsley, rosemary), 1 clove of garlic, 2 bay leaves, 1 bunch of different herbs, 1 onion, ground red and black pepper, 2 tbsp. spoons cream, salt.
Cooking
Chop the greens, cut the onion into 4 parts, put them in the pan along with the giblets, 1 bay leaf and 1 glass of water.
Rub the inside and outside of the duck with minced garlic, salt, black pepper and a mixture of herbs; put 1 bay leaf inside the carcass.
Put the duck breast down on the oven grate, put a frying pan with giblets and herbs under it. Fry at a temperature of 225 ° C for 60-90 min, periodically wetting the surface with cold water. If necessary, add hot water to the pan.
Turn duck 20 minutes before done.
Rub the contents of the pan through a sieve, add cream, season with red and black pepper, salt and boil.
Duck served with this sauce and potato croquettes.
Duck stuffed with cabbage and apples
Ingredients :
1 duck, 400 g sauerkraut or fresh cabbage, 10 Antonov apples, 5 onions, 100 g butter, 0.5 cup dry wine, 0.5 cup broth, pepper, salt.
Cooking
Chop cabbage, squeeze and fry with chopped onion in oil.
When the cabbage becomes soft, add sliced apples, pepper, salt, broth and simmer for 5-10 minutes.
Salt and pepper the prepared duck inside and out, fill the belly with stuffing, and sew up the hole. Place back into the pan, pour in 1/3 cup water and place in the preheated oven.
Bake for 1.5-2 hours, periodically basting the carcass with rendered fat and wine.
Cut the finished duck into portions, put on a dish, and around - cabbage with apples.
Duck stuffed with prunes and carrots
Ingredients :
1 duck, 2 boiled eggs, 2 slices of white bread, 0.5 cups of milk, 100 g butter, 2 boiled carrots, 200 g prunes, pepper, salt; sour cream, powdered sugar.
Cooking
Rinse the prunes, soak in cold boiled water, remove the pits.
Pass boiled eggs and bread soaked in milk through a meat grinder, add diced carrots, prunes, butter, pepper, salt and mix well. Stuff the prepared duck (salted and peppered) with this stuffing and sew it up.
Put the duck in a frying pan, add a little water, put it in a preheated oven and fry for 1.5 hours, periodically pouring over the juice that has been released, brushing with sour cream and sprinkling with powdered sugar.
Duck stuffed with potatoes and sauerkraut
Ingredients :
1 duck, 8 pcs. potatoes, 200 g sauerkraut, 100 g ham or chopped ham sausage, 2 eggs, 1 onion, 75 g butter, salt, pepper, garlic, parsley.
Cooking
Cut the potatoes into small cubes and boil until half cooked. Chop the sauerkraut.
Fry chopped onion in butter until golden brown, add raw duck liver cut into small cubes, salt, pepper, chopped herbs. Ham cut into small cubes. Combine all products, beat in eggs and mix.
Grate the carcass with pepper and garlic, fill with minced meat and fry in the oven, periodically pouring over the secreted juice and fat.
Duck with noodles and mushrooms
Ingredients :
1 duck, 200 g homemade noodles, 6-7 dried mushrooms, 50 g butter, 2 eggs, 1 tbsp. a spoonful of flour, 1 carrot, 1 celery root, 2 tbsp. spoons of sour cream pepper, salt.
Cooking
Boil the noodles in salted water and drain in a colander. Mushrooms pour 2 cups of water, boil, strain and chop finely.
Set aside for sauce 2 tbsp. spoons of mushrooms, mix the rest with noodles, eggs, butter, salt, pepper.
Stuff duck carcass with mushroom noodles and sew up.
Put the duck in a saucepan, pour in the mushroom broth, add the chopped roots and simmer until done.
Prepare the sauce: pour the broth left over from the duck stewing into a frying pan with flour sauteing, stir, add 2 tbsp. tablespoons chopped mushrooms, sour cream and bring to a boil.
Free the finished duck from the threads and get the minced meat.
Place the duck in the center of the dish, around the minced meat and pour over the sauce.
Duck (goose) stew
Ingredients :
duck or goose, spices, salt, 1/2 parsley root, 1 onion, 1 tbsp. a spoonful of fat, 1/2 cup sour cream.
Cooking
Duck (goose) cut into portions, grate with a mixture of salt and spices (pepper, bay leaf, coriander, cumin) and put for 12 hours in a cold place in a sealed container.
Then fry the meat in fat until golden brown, transfer to a saucepan, half-fill with the fat remaining from frying and hot water, add chopped roots, onion and simmer under the lid.
At the end of the stew, season with sour cream and heat over low heat, without boiling.
Put the meat on a dish, pour over the strained sauce in which it was stewed.
Monastery duck
Ingredients :
1 small duck, 1 kg sauerkraut, red and black ground pepper, salt.
Cooking
Duck cut into portions, salt and pepper. Place shredded sauerkraut in a bowl with meat.
Pour in water or broth (so that the food is covered), close the lid and simmer in the oven.
Duck with mushrooms
Ingredients :
1 duck, 1 onion, 1 tbsp. a spoonful of flour, 2-3 tomatoes or 1 tbsp. spoon of tomato puree, 2 tbsp. tablespoons of fat, 1/2 kg of fresh mushrooms, pepper, salt.
Cooking
Duck cut into portions, pour cold water, bring to a boil, salt and cook until half cooked.
Prepare the sauce: saute finely chopped onions, flour, peeled and chopped tomatoes or tomato puree in fat, dilute with the broth in which the duck was boiled.
Pour the sauce over the meat, add the mushrooms cut into strips, salt and simmer over low heat until tender.
Sprinkle with ground black pepper when serving.
Duck at home
Ingredients :
1 fat duck, 2-3 onions, 2 tbsp. spoons of tomato puree, 1 tbsp. a spoonful of flour, 1/2 teaspoon of ground black and red pepper, 5-6 cloves of garlic, bay leaf, salt.
Cooking
Cut the duck into portions and fry in duck fat until golden brown, then put in a saucepan, add water so that the duck pieces are covered, and simmer for about 20 minutes.
Finely chop the onion, lightly fry in fat, add tomato puree and keep on fire until it thickens. Pour the flour previously dried in a pan, pour in the juice formed when stewing the duck, mix, add pepper, salt, bay leaf, bring to a boil.
Pour the duck with the resulting sauce and simmer until done.
Put the garlic in the sauce before serving.
Duck with berry sauce
Ingredients :
1 small duck, 50 g butter, 250 g rice, 1 orange, 2 apples, lettuce, salt, spices.
For sauce: 200 g frozen or fresh berries, 1.5 tbsp. tablespoons of dry wine 1 st. a spoonful of sugar.
Cooking
Salt the duck fillet, rub with spices, fry and bring to readiness in the oven.
Peel apples and oranges, cut into slices and fry. Boil rice.
To prepare the sauce, boil frozen or fresh berries with wine and sugar and puree.
Arrange lettuce and rice on a dish, top with sliced fried fillet and garnish with fried apples and orange.
Serve the sauce separately in a gravy boat.
Duck breast stuffed with cranberries
Ingredients :
1 duck carcass, 1 apple, 100 g lingonberries, 50 g vegetable oil for frying, salt, ground black pepper, 2 potato tubers, 2 carrots and greens for garnish.
Cooking
Cut 2 pieces of breast fillet from the processed duck carcass.
Peel and core the apple, cut into small cubes, sort the lingonberries and rinse with cold water.
Make two longitudinal cuts in pieces of breast. Stuff one of the cuts with an apple. Stuff another incision with lingonberries.
Chop the fillet with skewers, salt, pepper, fry in vegetable oil for 5-8 minutes and bake in the oven until tender.
Serve with a side dish of boiled potatoes and carrots with herbs.
