A characteristic of Russian cuisine is the preparation of poultry and game with whole carcasses. Stuffed products have always been especially popular - duck and goose with apples, chicken stuffed with rice and raisins or prunes, goose and duck stuffed with salted mushrooms or milk mushrooms, etc. It is difficult to imagine a modern holiday table without these traditional products. Beautifully and originally designed, they seem to confirm the old saying "A bird on the table is a holiday in the house."
Poultry intended for boiling, stewing or frying is pre-cut: the head is cut off along with the neck and the tips of the wings, gutted, excess fat is removed, then washed in running water and dried. If the bird is fried whole, then the legs and wings are pressed to the sides of the body and tied.

Duck (or turkey) stuffed with potatoes and sausages

Ingredients :
1 duck, 3 pcs. potatoes, 200 g white bread, 2 sausages, 2 onions, 2 tbsp. tablespoons chopped parsley and dill, 2 tbsp. tablespoons of butter, 1 tbsp. a spoonful of vegetable oil, pepper, salt.

Cooking

Fry diced bread and potatoes in butter. Fry finely chopped onions, parsley and dill in vegetable oil. Cut sausages into slices and fry.
Mix everything, salt.
Salt and pepper the carcass, stuff with minced meat and fry in the oven, periodically pouring the resulting juice and fat.

Duck with stewed mushrooms and apples

Ingredients :
1 duck with giblets, 1/2 kg of stewed mushrooms, 1 tbsp. a spoonful of butter, 1 onion, 1 egg, 3-4 apples, 1 teaspoon of cumin, 2 cloves of garlic, salt, pepper.

Cooking

Cut the carcass along the back, wash and remove the bones (leave the bones of the thighs and wings), cut off the neck. Grate the carcass from the inside with crushed garlic, cumin and salt.
For the filling, pass stewed mushrooms through a meat grinder together with boiled liver, stomach and neck meat, add finely chopped onion and fried in oil, peeled and sliced ​​apples, salt, pepper, beat in an egg and mix.
Stuff the duck, sew it up and roast in the oven, basting occasionally with the resulting juice and fat.
To serve, cut into portions and drizzle with juice.

Duck or goose stuffed with rice

Ingredients :
1 duck or goose, 2 cups boiled rice, 1 egg, 1-2 tbsp. tablespoons butter, 1-2 onions, 1-2 tbsp. spoons of raisins, spices, salt.

Cooking

Put the onion sautéed in oil, beaten egg, raisins, salt into crumbly boiled rice and mix.
Grate the bird carcass with salt and spices (pepper, bay leaf, coriander, cumin), fill with minced meat, sew up and fry in the oven, periodically pouring juice and fat.

Duck or goose stuffed with red cabbage

Ingredients :
1 duck or goose, pepper, bay leaf, coriander, cumin, salt, 250 g red cabbage, 2-3 onions, 1 carrot, 1 tbsp. a spoonful of butter, lemon juice or citric acid, salt, sugar.

Cooking

Grate the bird carcass with a mixture of salt and spices, fill with minced meat, sew up and fry in the oven, periodically pouring over the secreted juice and fat.
To prepare minced meat, finely chop the cabbage, add onion and carrot sautéed in oil, salt and sugar to taste, pour in lemon juice, a little hot water and simmer.
When serving, cut the bird into portions, put on a dish, put stewed cabbage around.
Serve strained sauce in a gravy boat.

Duck with fruits

Ingredients :
1 duck, 150 g prunes, 3-4 apples, lemon juice, salt, pepper, marjoram.

Cooking

Grate the duck carcass with lemon juice, salt and pepper, fill it with stuffing of prunes and apples cut into slices and sprinkled with marjoram and put in a cold place for 2-3 hours.
Roast in the oven, periodically basting with the resulting juice.

Duck roasted with cherries

Ingredients :
1 duck, 500 g cherries, 250 ml red wine, pepper, salt.
