Marmalade is cooked from fruit or berry puree. Puree can be bought in pastry shops (sold in vacuum packs or frozen), or you can cook it yourself. I made my own orange puree. I'll tell you how. You will need a regular citrus juicer. Wash the oranges, cut in half and squeeze the juice. It is important to squeeze the juice through a rare grate so that the juice is obtained with pulp, and the pulp that “settles” on the grate should not be thrown away in any case, then we will use it. nine0003

So, the juice is squeezed out, all the pulp has been collected from the grate. Take a saucepan (important - a large one, otherwise the marmalade will begin to boil away during the cooking process, and with thick walls and a bottom - otherwise it will burn), put it on the scales, reset it. Put all the pulp first, then add the juice so that the weight of the puree becomes 450 g.


Dilute citric acid in 5 g of water, mix sugar with pectin.


Heat the puree until the first signs of boiling appear and, whisking continuously, pour in the sugar-pectin mixture. nine0003

Bring the mixture to a good boil and pour in the glucose syrup. Mix thoroughly with a whisk! Cook marmalade until it reaches a temperature of 107 ° C. In this photo, marmalade after adding glucose syrup, not yet boiled.


The temperature in this photo is 103°C. You need to cook marmalade on fire, slightly above average (7 out of 10), periodically stirring with a whisk. The temperature will rise very slowly, sometimes it will seem that nothing is happening. Just be patient.


In this photo, the temperature is already 106°C - marmalade will be cooked soon! While marmalade is being cooked, you need to prepare a form - put a rectangular frame on a silicone mat.


When the temperature is reached (107°C), pour the prepared citric acid solution into the marmalade and mix thoroughly with a whisk.


Now you need to immediately pour the marmalade into the prepared mold. My puree had a lot of fibers, which is why it is so "shaggy", but, on the contrary, I like to have more than just juice in the puree. nine0003

If everything is done correctly (good quality pectin, correctly measured weight of all ingredients, correct temperature), then in 10-20 minutes your marmalade will harden. You need to wait until it finally cools down well at room temperature (in no case put it in the refrigerator!) Next, cut the layer of marmalade into slices and roll in fine sugar.


Allow marmalade to stabilize for a few more hours.
