I love adding veggies to sauces to add flavor and nutrition to food for kids—it’s often an easy and effective way to boost nutrient intake! And the thing about using cauliflower in this cheese sauce is that it adds creaminess and nutrition, but blends right in.

And the best part? You can make it ahead of time, stash it in the fridge, and use it as needed throughout the week.

This easy cheese sauce, which simply blends together without the need to make a fussy roux, pairs really nicely with broccoli and is a little less salty than a traditional cheese sauce might be.

It’s also gluten-free (if that is an issue in your house) and perfectly smooth.

Ingredients You Need

To make this cheese sauce you’ll need:

  • Grated cheddar cheese: You can buy it shredded or shred it yourself on a box grater.
  • Butter: I use unsalted butter.
  • Milk: I use whole milk, but low fat would work, too, if that’s what you have.
  • Cauliflower florets: Fresh or frozen will both work here. You can buy a whole head of cauliflower or use precut florets.
  • Garlic powder
  • Salt

TIP: This is a nice way to use up a small amount of lingering cauliflower or to simply offer a healthy dipping sauce to go with dinner.

  2. Add the cauliflower to a steamer basket fitted in a medium pot with water. Cook until soft (photo 2).
  3. Add all ingredients to a blender (photo 3).
  4. Blend until very smooth. Season to taste (photo 4).

How long can I store leftovers?

Seeing that the mayonnaise thickens, add lemon juice and prepared starch sauce to it.

    To make the mayonnaise look more appetizing, you can add greens (chopped finely) or grated carrots.

    Mayonnaise goes well with fish, poultry or as a salad dressing.

  • Strawberry sauce

    Strawberries should be sorted and washed. Pass through a sieve. Then boil the syrup, remove the foam, filter and cool. After that, mix the syrup and berry puree.

    This sauce can be used with flour dishes and cereals.

Cheese sauce with pumpkin according to Annabelle Carmel's recipe I wanted to cook right away. Perhaps because there is a pumpkin on the balcony or because pumpkin is my favorite product. NO she likes to complicate her recipes and I like to make it quick and easy. Therefore, simplified the children's recipe a bit and honestly made it sweet. Since I made a small portion, everyone only had to try 2 spoons, I was not afraid to throw everything away in the end.

Advice: If there is any doubt about the children's recipe, then we make a small portion for 1 time. So it will be possible to find out whether it will be possible to cook it, the baby will like the dish, and whether it is worth including it in the baby’s daily or weekly diet.

Pumpkin and carrots are rich in dietary fiber and vitamins A and C, making them great treats for the skin and eyes.

Evidence suggests that Vitamin A strengthens the immune system and also helps fight disease. However, some studies have also shown that eating more plant-based foods, such as pumpkin and carrots, reduces the likelihood of obesity in children. Pumpkin is also good for the heart. Carrots have far more calories than pumpkins. And together, in pumpkin and carrots, there are only 67 kcal per 100 grams of product (26 and 41 kcal, respectively).

In general, these two vegetables, when combined, do a lot of good for children's health.

The kids recipe is amazing. Sweet, tasty, delicate and unexpected combination of flavors. We Russian women do not cook this, simply because we are not used to combining these products. And I advise, at least for an inexperienced kid who may appreciate and love.

    Instructions

    3. Simmer pumpkin in melted butter for a couple of minutes, add carrots, simmer for a couple more minutes.

    4. Add wheat flour and mix.

    5. Immediately pour milk, stir. I decided to do without flavored milk, as I imagined that it would take 30 minutes to cook!

    6. Simmer for about 10 minutes or until pumpkin is tender.

    7. Blend with a blender until smooth.

    8. Grate cheese beforehand. The type of cheese is not important, the main thing is that it melts.

    9. Add cheese to pumpkin and carrot mass.

    10. Simmer until thick.

    11. I hope it's clear, we stir so that it doesn't burn.

    12. Boil pasta in advance. Mix sauce with pasta.

    13. Serve warm. The dish is sweet, unusual, tasty.
