Why It's Sometimes Difficult To Find Beef Short Ribs

When you think ribs, you're likely thinking of those fall-off-the-bone, slow-smoked ribs that are popular at barbecue joints. These are pork ribs, and they come from a pig; they're more common than beef ribs, and it's not unusual to eat a whole rack yourself. But you might not have known that beef ribs exist, too, and they're far different from their pork counterparts. According to MasterClass, beef short ribs are much larger and meatier than pork ribs, with much of that meat sitting on top of the bone. They come from the short plate part of the cow, which is what gives them their name.
You can likely only eat one short rib, maybe two at most, on your own, and they come from cows rather than pigs. With so much meat comes a heftier price tag; you can expect to pay substantially more for beef short ribs than pork ribs. According to Whole Foods' website, pork ribs run about $7.49 per pound, while beef short ribs are nearly double that at $14 per pound (though actual cost may vary by location). Plus, beef short ribs tend to be harder to find — but why?
Why beef short ribs can be hard to find

Short ribs often aren't available in the meat section of the grocery store; you usually have to go to the beef counter, where you're lucky if your grocer has them. According to BBQ Host, that could have everything to do with where you live. The outlet says that beef short ribs are sometimes difficult to find outside the Midwest region of the U.S. because this type of meat is often reserved for specialty stores or restaurants. So, while a specialty butcher might have them, you'll be hard-pressed to find them at your local Kroger. Certain high-end grocery chains, such as Whole Foods, are more likely to stock this cut of meat — but you'll pay a premium for it.
Plus, beef "dino" ribs, which are entire beef short ribs that aren't cut at all, are even harder to find, according to Martha Stewart, because of their incredible size.
Whether you're searching for dino ribs or short ribs that have been cut, don't confuse them with beef back ribs. According to BBQ Host, these ribs are shaped more like pork ribs (but they're longer, and the meat is in between the bones).
How to cook beef short ribs

The cooking method for these ribs varies and can range from slow-cooked to grilled or oven-baked. MasterClass offers four methods: Braised, grilled, sous vide, or oven-baked, all of which will give the ribs a slightly different flavor and texture.
Braising the short ribs means cooking them in liquid, which can be done in an oven or a slow cooker. Oven-roasted and grilled are the most obvious: You can bake them low and slow in an oven, or you can toss them on the grill to get a nice sear while leaving the inside rare. Sous vide, on the other hand, means to cook them in a water bath, which takes the longest — MasterClass says you can expect this method to take 24 hours.
Seven Sons, a meat farm, says you should generously season the short ribs; salt is important here, since it will bring out additional flavors within the meat. Seven Sons also recommends garam masala as an alternative and enhanced flavor element versus traditional salt and pepper.

Ingredients:
- Pork ribs - 1 kg
- Potato - 1 kg
- Sweet pepper - 300 g
- Tomatoes in their own juice - 400 g
- Garlic - 6 teeth
- Onion - 160 g 1 rather large
- Cilantro - 2 tablespoons crushed
- Parsley - 2 tbsp. crushed
- Tomato paste - 1 tbsp. slide
- Water - 120 g
- Dried basil - 1 tsp slide
- Salt to taste
- Black pepper - to taste
- Vegetable oil - 6 tbsp.
Preparation: Step 1

I buy ribs in the bazaar, from a trusted seller for years, so I am sure of their freshness.
Rinse the ribs well under running cold water. Run your hands over the meat and remove the small pieces of bone that remain after chopping. Pat dry with paper towels.Next, cut the ribs in portions. Of course, it is good if they are short and fleshy. In this case, you get a couple of pieces per serving.
Salt and pepper the ribs (you can use a mixture of peppers) and add four tablespoons of vegetable oil. Mix everything well. The oil will help distribute our seasonings evenly.

Peel the onion and cut into medium-sized half rings. 160 grams is two medium or one large onion.
I'm cooking this dish in the duck-house. If possible, use it or a thick-walled pan.We put the roaster on the stove, the fire is maximum. Add a couple of tablespoons of vegetable oil and throw in the chopped onion. Fry for a few minutes, stirring, until light golden. Next, add the ribs. Don't reduce the fire. Fry further until our ribs are lightly browned on all sides. After that, close the lid tightly, make a minimum fire and leave the ribs to stew for 20-25 minutes.

While the ribs are stewing, we will have time to prepare all the vegetables and herbs. Wash and peel potatoes. Let it soak in cold water in a bowl for now.
Peppers can be taken in absolutely any color. It also needs to be washed, the stalk, seeds, white membranes removed and arbitrarily cut, not very finely, I have half rings.
Peel and mince garlic in any way. I just cut it with a knife.
I have fresh frozen greens from summer. If you don’t have or don’t like cilantro, replace it with parsley, but I personally taste better with cilantro. Don't skimp on the garlic. If fresh basil is available, then add, like the rest of the greens, about two tablespoons. I have only dry, therefore 1 teaspoon with a slide.

Step 4
We cut the potatoes quite large (if the potatoes are small, then into 4 parts), since the ribs will be stewed together with vegetables for 40 minutes and we do not need boiled potato porridge.
So, let's start putting everything into the duck bowl for our ribs. First, half the potatoes, then half the chopped pepper, salt everything on top and add half the greens with garlic.
If this dish will not be eaten by children and you like it spicy, then it's time to add a teaspoon of finely chopped red chili pepper. Again, a layer of potatoes, chopped peppers, salt and the remaining greens with garlic. I also like to add lightly fried eggplant circles. But this time, it just wasn't available.

Step 5
Tomatoes. In season, I, of course, take fresh fleshy tomatoes. They will need 3-4 pieces of medium size. It is advisable to remove the skin from them. To do this, hold them for a minute in boiling water, and then pour cold water over them. After half a minute, drain - the skin will be removed without problems.
It's out of season, so I use tomatoes in my own juice. 400 grams is the standard, most common, jar. I take already crushed. If you have whole ones, then just lightly mash them with a fork.
Pour the contents of the jar over potatoes and peppers - crushed tomatoes with juice.
Dilute a spoonful of tomato paste with about half a glass of water. Pour into duck. -
Step 6
And now is the time to make the maximum fire and bring everything to a boil again. Next, tightly close the lid, make the minimum fire already and simmer for another forty minutes. After this time, the meat easily moved away from the bone and was tender and, having absorbed all the flavors, very tasty.
Of course, the stewing time depends on the meat, or rather on the "youth" of the purchased pig. Check the meat after forty minutes, if it seems hard to you, increase the stewing time by 15-20 minutes.
